Batching it

Katherine will not be home until Sunday. So, I am left to my own devices. This morning I went to the market and bought some Curry spices, Coconut Milk, white onions, and 2 pounds of stew meat. I am making up enough Thai Beef Stew to last for the duration of the emergency.

I don't often have a chance to do this because it is much hotter than Katherine can stand.

It may be too late, but here are few additions to your thai stew that may do well. One or two Kafir lime leaves, would give a unique thai aroma. I now own a Kafir lime tree. I'll try to bring some leaves on my next visit, they freeze well. Lemon grass ? Also, the red thai curry paste sold in small plastic containers at your local Ranch 66 or other asian supermarket is really good. Carefull it is exstremely hot. Cilantro??
And never, never, never use lite coconut milk.

Actually, I did get the hot chili paste in a little plastic container. I forgot to mention that I also added Thai fish sauce. Howerver the Kaffir lime leaves sound like a real winner! Bring 'em on!

Lemon grass is probably too subtle for this particular dish.
